Thank you Kootoyoo


For your amazing banana bread recipe! It is delicious, fail safe and healthy. The kids absolutely devour it when I make it and they have NO idea it has 4 mashed bananas in it - that is a lot of banana!

Moderations I made was to use wholemeal flour and instead of 2/3 cup of sugar I used half a cup. When bananas are over ripe they are so sweet that cutting down on the sugar isn't really noticed.

Oh yeah and today I put a little desiccated coconut on top to toast! Life is so much better with coconut in it!

Its a winner over at ours too! I never thought about cutting down the sugar but there's 4 ageing bananas on the bench begging me to try. X

OK, OK, I'll give it a burl. (I hadn't before because the youngest detests anything cooked with banana - smells it a mile off. But she lervs coconut...

I am so not a lover of the banana but this does look good. I have been resticting my love of the coconut to lamingtons until now
